The secret is to eat the tarts directly from the oven. The hong kong-style egg tarts filling should be slightly puffed up. These tarts are made using the Chinese puff pastry which is less oily than the regular western pastry. Bake the tarts for about 15 to 20 minutes. Then place the tart molds into the preheated oven and bake until golden brown. Roll out the dough (5mm thick) and cut it with the round cookie cutter. Preheat the oven to 190C and position the rack on the lower third level. Strain the filling through a strainer and into a measuring cup or pitcher. Pre-heat the oven to a temperature of 230 degrees celsius or 450 degrees fahrenheit. Whisk the evaporated milk, eggs, and vanilla extract in another large bowl. Add egg, vanilla extract, and ice-cold water into the mixture, mix until it forms a dough. Using your fingertips or a dough blender/cutter, blend the butter, flour, and sugar to a coarse crumbly mixture. Baking the Hong kong-style egg tarts - 20 minutes Sift 1 cupPlace 1 cup flour and the powdered sugar into a mixing bowl. Fill the tart shells with the egg mixture. Stir in the vanilla extract and condensed milk. Whisk every egg (9 of them) gently into the sugar and water mixture. Turn off the heat and let cool off to room temperature. Combine white sugar and water in a medium-sized saucepan and cook until the sugar has been dissolved. Use your fingers to press the sides onto the tart mold. Press until the entire bottom and sides are covered. Shape the dough into a large ball, then take off smaller balls to fill in the tart molds. The mixture should be somewhat moist, you can add more butter if the dough is too dry, or add more flour if it's too greasy. Add the beaten egg to the mixture along with a few dashes of vanilla extract. Mix in the butter (on room temperature!) into the mixture using a fork.
